Beverage Intelligence: The Next Frontier for AI

Artificial intelligence is transforming how organizations capture, scale, and apply knowledge. Yet one industry has remained remarkably dependent on human expertise and intuition: beverages.

Every day, millions of decisions are made about what to drink, what to pair with food, and how to create memorable hospitality experiences. I believe Beverage Intelligence represents the next stage in hospitality—combining structured expert knowledge, proprietary data, recommendation technology, and artificial intelligence to help people make better beverage decisions at scale.

Beverage Intelligence extends across the entire beverage world, from wine, spirits, beer, and cocktails to the rapidly evolving category of non-alcoholic beverages. Its applications reach across hospitality, wholesale, distribution, and retail—helping businesses better understand customer preferences, deliver more relevant recommendations, and unlock commercial value from their beverage expertise. At its heart, it is about connecting people with beverages they will enjoy while helping businesses grow and thrive.

“AI is making information abundant. Beverage Intelligence is about transforming deep beverage expertise into scalable intelligence that helps people make better decisions.”

Helping Hospitality Businesses Thrive

Having spent years working with and observing hospitality businesses, I have enormous respect for the people who create wonderful guest experiences while managing the demanding economics of the industry.

Many restaurants and hospitality businesses operate on thin margins, even when they deliver exceptional food and service. Yet beverages, among their highest-margin offerings, remain an underdeveloped commercial opportunity.

Too often, beverage knowledge resides with a handful of experienced individuals. Guests may struggle to navigate unfamiliar wine and beverage lists, while hospitality staff and distributor sales teams may lack the confidence or depth of expertise to make informed, personalized recommendations across extensive beverage portfolios.

Why Beverage Intelligence Matters

My fascination with beverages extends well beyond wine. Working as a sommelier at the Four Seasons in Sydney gave me firsthand experience of the extraordinary breadth of the beverage world and the important role beverages play in creating memorable hospitality experiences. It also taught me that a great recommendation is about much more than product knowledge. It requires understanding the guest, the food, the occasion, and what will make the experience special.

Unlike most consumer decisions, beverage choices are highly contextual. The best recommendation depends on the food, the occasion, personal preferences, budget, and the beverages actually available.

Traditional ratings and reviews rarely answer the question people are really asking: “Given this meal, these preferences, and the options in front of me, what am I most likely to enjoy?”

The best sommeliers and hospitality professionals answer that question intuitively, drawing on years of experience and deep product knowledge. But that expertise is difficult to replicate consistently across a restaurant, hotel, or hospitality group.

This is where I see an extraordinary opportunity for Beverage Intelligence: making expert guidance more accessible, more personalized, and more useful to both guests and the businesses serving them.

“My ambition is simple: to help people enjoy better beverage experiences while helping hospitality businesses become more successful and financially resilient.”

The result is a missed opportunity for customers to discover beverages they would love—and for hospitality businesses, distributors, and retailers to increase sales and profitability.

I believe technology can help change this.

By combining expert beverage knowledge with customer preferences, food pairings, inventory, and intelligent recommendations, hospitality businesses can make more relevant suggestions, help staff serve guests with greater confidence, and unlock more value from their beverage programs.

Thirsty Logic

To bring this vision to life, I co-founded Thirsty Logic, an AI-enabled Beverage Intelligence Platform.

Built on proprietary datasets, structured expert knowledge, recommendation algorithms, and AI, the platform helps restaurants recommend the best beverages from their own lists, personalize guest recommendations, strengthen beverage programs, and increase revenue.

The same underlying intelligence has applications across hotels, bars, wholesale, distribution, and retail. It can help businesses better understand consumer preferences, guide product discovery, support more effective merchandising and sales decisions, and connect customers with beverages that suit their tastes, meals, and occasions.

Rather than replacing human expertise, the platform makes that expertise available at scale—bringing the knowledge and judgment of experienced beverage professionals into everyday hospitality decisions.

For me, Thirsty Logic is an example of Artful Intelligence in action: combining deep human expertise with the power of AI to create better experiences for people and stronger commercial outcomes for businesses.
